FRUIT TREE PRUNING
Can start from mid-July-August, make sure pruning is done correctly so as to not remove next year's fruit.

Make sure all cutting tools are clean from disease. Rubbing alcohol with a minimum of 70% isopropyl of rubbing alcohol is recommended for cleaning your cutters.

After pruning spray trees with either Lime Sulphur or Copper Oxychloride, it is recommended to alternate between the two each year. This will help prevent any fungal spores growing, it isvimportant to cover all branches and cuts of the tree as well as the trunk and ground. If there are any leaves on the ground is advisable to remove these leaves

WINTER PESTS
Even though roses and maples will not be doing much through winter, Aphids and scale will still be about eating your plants. 
White Oil or Pest Oil can treat these pests, if large infestations are noticeable Pyrethrum is a contact chemical that will kill pest quickly after spraying. 
There are other eco friendly products which can be used for vegetables or if you prefer those products
